Tiredness can be a powerful agent that silently and invisibly perverts our judgement.
So I’m flabbergasted that I never posted what I had for thanksgiving a few weeks ago so here ya go😏. I know this doesn’t look like a traditional vegan thanksgiving but tbh I never even liked traditional thanksgiving food so what’s the point of veganizing it??
So I made some vegan mac which was DANK af💦 and then I made some oven baked potatoes with Indian spices!! And then as my “turkey replacement” I made some chickpea chili thingy😂 and the rest was just some veggies made by our friends!
So I’m home for Christmas break now and I’m so happy😊😊 but I’m worried I’m gonna get bored haha😬😬. It really sucks when all your friends are at jmu and you have like one person to hangout with back home😂. But maybe it will be good to just relax and let my liver recover after this semester. Lol throwback to last year this time when I didn’t like drinking 💫
Anyways!! I feel like I’m the past few weeks my butt has gotten HELLA good. Like last night i took some bomb ass booty pics and I’m so proud of how far I’ve come. Last year this time I was still a little too skinny and now according to my friend joe I’m “dumb thic” (that’s an exaggeration but it was a nice thought)

❤️ Antioxidant Salad with Organic Berries and Arugula 📷 by @naturallyzuzu 🚨🚨Raspberry Poppyseed Antioxidant salad dressing Recipe: Makes 2 cups
6 tablespoons red wine vinegar
3 tablespoons maple syrup (optional) use 4 dates if you don’t want to use maple syrup.
1 teaspoon salt
1 teaspoon ground mustard
1/2 cup avocado oil
1 cup fresh or frozen raspberries, thawed
1 teaspoon poppy seeds
Blend all the above ingredients except poppy seeds in the blender for 10 seconds. Add poppy seeds and pulse once or twice. Store the dressing in glass jar in the fridge for up to 7 days.

So the original recipe for this (last photo) we already loved so I thoughtI would try something new with it. I swapped the pasta for butternut squash noodles and added some extra veggies besides the corn and tomatoes - half of a red onion and a red bell pepper. It’s kind of a veggie mash up mess but it tastes awesome!

I know a lot of you meat eaters out there have faced bad experiences talking to vegans in the past. You label them as aggressive, forceful or extreme. Now take a walk with me here.
We are known for our love of dogs and cats. We bond with these animals because they have a personality of their own that we become attached to and love them for. They reciprocate the love as it has been shown to them also. What if you found out a dog has been taken away from their safe environment, dumped in a factory, forced to stay there in a cage, beaten and manhandled, have their friends killed infront of them, starved for days while transported to the slaughterhouse and then eaten... because their meat tastes good. How would you feel? Why wouldnt you feel that way towards a cow, chicken, pig or lamb? Are they not capable of reciprocating love? Can they not feel terror while they are being treated like this? The only crime they commited was being born a different species. Is everything that Is accepted in society okay?
Now you being a pet lover feel such anguish for this dog and how he/she would feel. Vegans being animal lovers feel exactly like that everyday.
Please be compassionate. Any reason to eat an animal is an excuse. Vegans are not extreme, what is being done to these sentient beings is extreme.

Tomato chickpea stew served with rice and avocado by @vegamelon 💛 Recipe:⠀
For the tomato chickpea stew⠀
-1 onion, diced⠀
-4 cloves garlic + 1 inch ginger, minced⠀
-3 medium carrots, diced⠀
-1 tsp paprika, 1/2 tsp cumin, 1/2 tsp cayenne, 1/2 tsp oregano, 1/2 tsp coriander⠀
-3 large tomatoes, pureed (or use 14 oz crushed tomatoes)⠀
-1-1/2 cups (14 oz) chickpeas⠀
-salt and pepper, to taste⠀
How to make:⠀
In a pot on medium heat, sautee the onion, garlic, and ginger for 5 minutes (using water/oil). Add in carrots and spices, stirring to incorporate. Pour the tomato puree into the pot, then cover and let cook on low heat for about 8 minutes, or until carrots are tender. Mix in chickpeas and season with salt + pepper, then cook for 3-4 more minutes before serving. Enjoy!

This #vegan recipe is easy AND delicious!😋⠀
Vegan Barbecue Pulled Pork⠀
2 ciabatta buns⠀
1 ½ lb. oyster mushrooms⠀
Vegetable oil (not olive oil)⠀
12 oz. bottle barbecue sauce⠀
1 cup vegan mayo⠀
4 tbsp. coconut sugar⠀
½ tsp. celery salt⠀
Pepper to taste⠀
½ cup apple cider vinegar ⠀
1 bunch kale, chopped⠀
2–3 carrots, shredded⠀
⅓ onion, chopped⠀
Shred mushrooms with a fork. Add vegetable oil to a hot skillet. Avoid using olive oil because it has a low burn temperature. Add mushrooms and cook until they release their liquid and it evaporates. Add barbecue sauce (reserving a few tablespoons for the dressing) and let the mixture simmer a few minutes. ⠀
Make slaw by combining the kale, onions, and carrots in a bowl. In a separate bowl mix together all other coleslaw ingredients. Pour mixture over veggies and massage in with hands to break down the kale a bit. For the dressing whisk together the remaining barbecue sauce and a bit of vegan mayo. Assemble your sandwich by adding pulled mushrooms to a toasted ciabatta bun and pouring some dressing over the mushrooms. Enjoy!
